The red (or hong) oolong has become a speciality of Taitung, Taiwan, where the leaf grows at a lower altitude (by comparison with Taiwan’s high mountain oolongs), developing a thicker texture, suited to a higher level of oxidation. This example, grown and processed by hand on a small farm, has a subtle, gentle character, with sweet floral notes balancing the richness of the red oolong.

Ah Shan

Ah Shan is a young tea farmer with an exciting vision. He keeps a small farm in Taitung County where he does all of the farming, roasting and processing for his red oolong himself. Taitung, in the Southeast of Taiwan, is also known as Houshan, meaning “behind the mountains”. The red oolong was developed in the early 2000’s to create an oolong capable of maintaining Taiwanese standards of excellence but at a lower altitude than Taiwan’s high mountain oolongs. Ah Shan uses the innovative combination of oolong and black tea techniques for the well-oxidized product that you see here. With all of the close personal attention to the process, he is able to experiment, constantly refining his craft and his product, and has already built a reputation among the specialists of Taitung for a red oolong that is both robust and refined. It exhibits all of the rich, fruity flavor associated with the Taitung’s red oolongs, but with a gentle, elegant finish.
